It’s one o’clock in the afternoon and about 55 degrees outside. Unfortunately, because you had a lot of work to get done, sleep wasn’t really an option last night. Now, you’re exhausted and starving. To make matters even worse, the only thing you brought for lunch is a boring sandwich you made this morning, some pretzels, and a bottle of water. (Not too tasty, huh?) This happens to me at least once a week. When it’s cold outside and I’m running late, the first thing I make is a sandwich when what I really want is a big ol’ bowl of soup. Even though I’ve got a busy schedule, I am committed to making every one of these soups this fall season (including the Spicy Southwest Turkey and Four Bean Soup above)!

In my opinion, there’s nothing like a cold day, snuggled up in my bed, eating some potato soup. It’s utterly delicious and extremely customizable. Fortunately the Pioneer Woman offers up her own delicious recipe You can exclude any of the vegetables that you see in the recipe (although I advise you not to) or add some more of your own. With step-by-step instructions, it shouldn’t be too hard to duplicate this recipe!
