To me, summer is best represented by a nice cold piece of cheesecake ( even more so than a warm slice of pie!). And I’m not the only one — lots of people are making this sweet chilly treat in brand new delicious ways!
Take the top picture — it’s a combination of a cheesecake made with ground-up rosemary leaves (I’m praying that it tastes better than it sounds!) mixed with a caramel apple filling. Savory and sweet coming together… like a perfect summer day! Or a perfectly yummy summer cheesecake.

I can’t eat something that adorable. the pigs in a blanket type of design for cheesecake is so nasty. I can’t eat something that gross.
smoothies and those colorful rocket/firecracker popsicles make me think about summer.

For me, cheesecakes and pies (and most baked desserts, really) are more a fall/winter thing. No-bake desserts, jello, ice cream, and fruit are more summer. I’m not a big fan of no-bake cheesecake though. It’s not as thick and creamy and decadent as baked cheesecake, and just doesn’t taste as good. Some of these look pretty good, but mostly I’m meh about them.
The caterpillar actually looks more like donut holes lol!
