With the hope that the rain does not ruin my Memorial Day, I fully intend on going to the beach, enjoying my day off and of course eating yummy food!
I have to say, I love splurging on holidays — especially if it means I don’t have to feel guilty about it the next day.
So for this holiday, I’ve decided to make fruit popsicles courtesy of Self magazine’s Popsicles under 100 calories.
I try not to post too many recipes, but when I find some great ones it’s really hard to resist! So, I chose one out of the 5 recipes they had and made an amazing, healthy snack for this holiday that I can splurge on – and not feel shameful.
Minty Grape Pops
Ingredients:
- ½ cup fresh or bottled lime juice
- ¼ cup honey
- 4 cups red grapes, halved
- ¼ cup packed fresh mint
Preparation
Whisk lime juice and honey in a bowl until the honey dissolves, then stir in 2 cups of cold water. Spoon grapes and mint into molds into small Dixie cups or a freezer pop molds. Add lime-honey mixture and sticks and freeze for 6 hours and voila! You have a healthy, summer treat that you can feel good about.
After making these, I realized I made the right choice because not only are they 57 calories each, but they are delicious! While the other recipes look amazing, I am just too much of a sucker for mint in the summer.

I have been really into popsicle making this summer! I’ve been making various smoothie popsicles so far (fresh fruit, greek yogurt, and coconut milk blended together then frozen). Right now I’m making some with lemon juice, honey, strawberries, and mint. I’m pretty excited to see how they turn out! I, too, am a sucker for mint. I have a mint plant in my garden and my dad makes mint iced tea a lot with it.
