There’s always a food trend sweeping through New York, and for the past year or so, it’s been banh mi, a type of Vietnamese sandwich, which are like heaven in a hoagie.

Technically the name of the baguette bread made of wheat and rice flour, banh mi is the common term for a submarine-type sandwich filled with pickled carrots and daikon, cucumbers, chili peppers, mayonnaise, and various meat, tofu and vegetable toppings.

Look at that cilantro. OMG.

But don’t fret, fellow vegetarians! You can get a vegan version at most banh mi places that’s made with tofu or seitan:
